NR(EC 1.7.1.3)广泛存在于植物中,是植物硝态氮转化为氨态氮的关键酶,也是诱导酶,对作物的产量和品质有影响。NR催化硝酸盐还原为亚硝酸盐,NO3ˉ +NADH+H+→NO2ˉ+NAD++H2O。在酸性条件下,产生的NO2ˉ能够参与重氮化反应生成紫红色化合物,这种紫红色化合物在540 nm处有吸收峰,540 nm下吸光值的变化即可表示酶活。
